British Cornish Pasty-A Twist for Cornish Pasty Week

The Cornish pasty, a British classic, dates back to the 19th century when Cornish miners relied on its hearty, hand-held design. Traditionally baked, this stove top version lets you enjoy the iconic dish in a new way—perfect for Cornish Pasty Week!

Ingredients (Makes 4 pasties)

For the pastry:

1. 300 g plain flour

2. 150 g unsalted butter (cold, diced)

3. 1/2 tsp salt

4. 4–5 tbsp cold water

 

For the filling:

5. 250 g beef skirt (finely diced)

6. 1 medium potato (peeled & diced)

7. 1 small swede (peeled & diced)

8. 1 small onion (finely chopped)

9. Salt & black pepper (to taste)

10. 1 tbsp butter

11. 1 egg (for sealing & glazing)

 

For stove top cooking:

12. 1 tbsp vegetable oil

13. 50 ml water

 

Method: 

1. Make the Pastry

·       In a bowl, mix the flour and salt.

·       Rub in the butter with your fingers until it resembles breadcrumbs.

·       Gradually add cold water and mix until a firm dough forms.

·       Wrap in cling film and chill for 30 minutes.

 

2. Prepare the Filling

·       In a bowl, mix the beef, potato, swede, and onion.

·       Season with salt and black pepper.

 

3. Assemble the Pasties

·       Divide the pastry into 4 portions and roll each into a circle (about 5 mm thick).

·       Place a portion of filling onto one half of each circle.

·       Add a small knob of butter on top.

·       Brush the edges with beaten egg, fold over, and crimp to seal.

 

4. Stove top Cooking Method

·       Heat a large non-stick pan with oil on low heat.

·       Place the pasties in the pan and cook for 5 minutes until the bottoms are golden.

·       Add 50 ml water, cover with a lid, and let them steam for 15–20 minutes.

·       Flip the pasties, cover, and cook for another 15 minutes.

·       Remove the lid and cook uncovered for 5 more minutes to crisp up.
