Mushroom and Vegetable Noodle Soup

Savour the goodness of Mushroom and Vegetable Noodle Soup – a wholesome blend of earthy mushrooms, vibrant veggies, and tender noodles in a savoury broth. A quick, comforting meal that effortlessly combines simplicity and nourishment.

Ingredients:

For the Soup:

  • 8 oz noodles (your choice)

  • 4 cups vegetable broth

  • 1 cup mushrooms, sliced

  • 1 cup carrots, julienned

  • 1 cup broccoli florets

  • 1 cup spinach leaves

  • 3 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • Salt and pepper to taste

 
 

Instructions:

Cook Noodles:
Cook noodles according to package instructions. Drain and set aside.
 

Sauté Vegetables:

In a pot, sauté garlic and ginger in sesame oil until fragrant.
Add mushrooms, carrots, and broccoli. Cook until slightly tender.
 

Add Broth:

Pour in vegetable broth and bring to a simmer.

 

Season:

Stir in soy sauce, salt, and pepper. Adjust seasoning to taste.

Finish Soup:

Add spinach and cooked noodles. Cook until spinach wilts.

Serve:

Ladle soup into bowls and serve hot.
